Damson flan with poppy seeds (Zwetschgendatschi mit Mohn)
Ingredients: (24 slices)
- 1.5kg damsonsFor the pastry base:
- 200g butter
- 120g sugar
- Vanilla essence
- 1 pinch of salt
- 2 egg yolks (medium)
- 250g flour
- 60g cornflour
- 50g ground poppy seedsFor the crumble:
- 150g flour
- 50g cornflour
- 100g chopped almonds
- 150g sugar
- 1 tsp ground cinnamon
- 150g soft butter
Mix butter, sugar, vanilla essence and salt until light and creamy. Mix in the egg yolks. Kneed in the flour, cornflour and poppy seeds. Wrap in cling film and leave in the fridge for 1 hour.
Rub the flour, cornflour, chopped almonds, sugar, cinnamon and soft butter together to form the crumble.
Stone the damsons. Roll out the pastry and line a large greased baking tray (oven tray), prick with a fork. Cover with damsons and sprinkle the crumble over the damsons.
Bake for 35-40 minutes at 200°C on the bottom shelf of the oven. Move to the middle of the oven and continue baking for a further 10 minutes.
