- 250g butter
- 350g flour
- 210g sugar
- 2 eggs
- 200g ground hazelnuts
- Approx. 150g redcurrant jelly
Sift the flour into a bowl, add the butter, cut into small pieces, and the ground hazelnuts. Mix in the sugar, vanilla sugar and eggs. Knead everything together by hand to form a smooth dough. Cover and leave in the fridge for approx. 1 hour.
Use a round cutter to cut out small circles (approx. 6 cm Ø). Cut out a smaller circle (approx. 3 cm) from the middle of half the circles.
Bake the circles and the rings for 8-10 mins in a preheated oven at 175°C. Remove from the oven and leave to cool. Heat the redcurrant jelly and spread it onto the circles. Dust the rings with icing sugar and carefully lay them on top of the circles.
